    Serves: 4 

    • 1 tablespoon butter
    • 1 tablespoon olive oil
    • 2 large potatoes, peeled and sliced
    • 1 large leek, green tops included, sliced and washed well
    • 4 cups (1 litre) water
    • 1 1/2 chicken or vegetable stock cubes
    • freshly ground black pepper, to taste

    1. Melt butter with the olive oil in a saucepan. Add the potatoes and stir gently for 5 minutes, or until slightly cooked.
    2. Add the leeks, water and crumbled stock cubes.
    3. Stir in the sliced leeks; pour in the water and add the stock cubes. Bring to the boil, reduce heat and simmer 5-10 minutes until vegetables are soft.
    4. Remove from the heat and puree with an immersion blender. Serve with a dusting of pepper.
