Rice Patties

    These veggie burger patties are made out of boiled rice and onion. Seasoned with salt, pepper, thyme and parsley then crumbed and fried, these are a delicious vegetarian alternative.

    Ingredients
    Serves: 2 

    • 1 cup rice
    • 1 small onion, diced
    • 1/2 teaspoon thyme
    • 1/2 teaspoon parsley
    • salt and pepper, to taste
    • 2 eggs, beaten
    • 1/2 cup bread crumbs
    • oil, for frying

    1. Boil rice according to packet directions. Also boil onion. Mix together with thyme and parsley. Season to taste with salt and pepper. Form into balls or patties, roll in egg then dip in bread crumbs.
    2. Heat oil in a large frying pan over medium high, then fry rissoles until golden brown on both sides.
