Buttery apple, sultanas and currants seasoned in mixed spice and sugar all rolled into a delicious home made pasty then boiled in a pudding cloth.

The Walters

Makes: 4 

  • 2 cups (250g) self raising flour
  • 1/3 teaspoon baking powder
  • 130g suet or butter, shredded
  • 1/2 cup (125ml) water
  • 1 large apple, peeled, cored and diced
  • 1/2 teaspoon mixed spice, to taste
  • 2 tablespoons sultanas
  • 2 tablespoons currants
  • 1 tablespoon butter
  • 2 tablespoons sugar
  • squeeze of lemon juice

  1. Sift flour and baking powder. Rub in the suet (or butter) then add the water. Turn out to a floured surface then kneed. Roll out.
  2. Mix together all other ingredients then spread over the pastry. Roll up carefully and pinch the ends to keep the filling in. Roll in a floured cloth then boil for 2 hours, until finished.

Floured Cloth

To prepare a pudding cloth, dip it in boiling water, then ring out (wearing gloves). Lay it flat on your bench and rub flour into the centre in a rectangle big enough to cover the entire pudding, this creates the pudding skin. Place pudding ingredients in, wrap up then tie with string. Immediately submerge in boiling water.
