Chock full of sultanas, currants and almonds, this fruit cake is slow cooked at a low temperature for 2 hours until done.

Makes: 1 fruit cake

  • 4 cups (500g) plain flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon bicarb soda
  • 250g butter
  • 2 cups (440g) sugar
  • 1 tablespoon vinegar
  • 6 eggs
  • 1 cup (160g) sultanas
  • 1 cup currants
  • 1/4 cup (30g) slivered almonds
  • 1/2 cup plum jam

  1. preheat oven to 150 degrees C.
  2. Sift together the flour, cream of tartar and the bicarb soda. In another bowl, cream together the butter and sugar. Gradually beat in the eggs and vinegar. Gradually mix in the flour mixture.
  3. Fold in the sultanas, currants, almonds and jam. Pour into greased cake tin then bake for 2 hours.
