Chocolate Walnut Sponge

Loaded with walnuts and with a hint of chocolate then served with whipped cream and chopped nuts, this delicous sponge makes a great afternoon tea or dessert.

The Walters

Makes: 1 cake

  • 1 cup (200g) sugar
  • 2 tablesoons butter
  • 4 eggs
  • 1 cup (130g) self raising flour
  • 1 tablespoon grated chocolate or cocoa
  • 125g walnuts
  • whipped cream, to serve
  • chopped nuts, to serve

  1. Preheat oven to 180 degrees C. Grease a round cake tin.
  2. Cream together butter and sugar. Add eggs, one at a time. Beat until stiff. Sift in flour and cocoa, add nuts.
  3. Pour into greased tin then bake in preheated oven until a knife inserted into the centre comes out clean, 15-20 minutes.
  4. Allow to cool on a wire rack. When cold, serve with whipped cream and chopped nuts.
