Pear Ginger Preserve

    Fresh pears and preserved ginger slow simmered together for hours with a pinch of cayenne pepper makes a delicious jam for any occasion. Enjoy your pears year round.

    Makes: 6 kg

    • 6kg pears, peeled and cored.
    • 5kg sugar, to taste
    • 250g preserved ginger
    • 1/2 teaspoon cayenne pepper
    • 4 cups water

    Preparation:2hours  ›  Cook:3hours  ›  Extra time:8hours marinating  ›  Ready in:13hours 

    1. Cut pears into quarters, sprinkle with sugar then let stand over night.
    2. Place in saucepan then boil for 3 hours. Bottle as you would jam.
