Another recipe passed down through our family tree, the vanity cake is light, soft and delicious. Tastes great alone, with your favourite icing or makes delicious lamingtons.

The Walters

Makes: 1 cake

  • 2 tablespoons butter
  • 1 cup (220g) sugar
  • 2 eggs, beaten
  • 1 cup (250ml) milk
  • 2 cups (250g) flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon bicarb soda

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Preheat oven to 190 degrees C. Grease a flat cake tin.
  2. Cream together butter and sugar. Add eggs and a bit of the milk. Sift in the flour, cream of tartar and the bicarb soda then add the remainder of the milk.
  3. Pour into greased cake tin then bake in preheated oven until a knife inserted into the centre comes out clean, roughly 30 minutes.
