Take the duck breast and coat in the herb blend. Leave while you set the BBQ. (Charcoal is best but gas works fine too).
Once the BBQ is at temperature drizzle the duck with the oil and cook for 7-8 minutes. Turn duck breast over and cook for a further 2 minutes. Check the duck is cooked to your liking then remove and leave to rest for 5 minutes while you prepare the salad.
On a serving plate create a layer of spinach leaves and sprinkle with most of the cherries and walnuts.
Slice the duck on chopping board then lay on the spinach. Sprinkle with the remaining cherries and walnuts to serve.
