BBQ Duck Breasts with Walnuts and Cherries Salad

The fat in duck makes it great for the BBQ and I use this recipe for my Christmas lunch making it a quick and easy outdoor option.

Serves: 1 

  • 1 duck breast, skin on
  • Herb Blend
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • Salad
  • 1 cup baby spinach leaves
  • 1/2 cup cherries
  • 1/2 cup walnuts

Preparation:10min  ›  Cook:10min  ›  Extra time:5min resting  ›  Ready in:25min 

  1. Take the duck breast and coat in the herb blend. Leave while you set the BBQ. (Charcoal is best but gas works fine too).
  2. Once the BBQ is at temperature drizzle the duck with the oil and cook for 7-8 minutes. Turn duck breast over and cook for a further 2 minutes. Check the duck is cooked to your liking then remove and leave to rest for 5 minutes while you prepare the salad.
  3. On a serving plate create a layer of spinach leaves and sprinkle with most of the cherries and walnuts.
  4. Slice the duck on chopping board then lay on the spinach. Sprinkle with the remaining cherries and walnuts to serve.
