Moqueca de Peixe (Brazilian Fish Stew)

    This fish stew, flavoured with garlic, lime and coconut milk is a very typical Brazilian dish with a distinctive flavour.

    Serves: 4 

    • 4 fillets barramundi or grouper
    • salt to taste
    • 3 garlic cloves, crushed
    • 4 tablespoons lime juice
    • 3 tablespoons extra virgin olive oil
    • 3 tablespoons grated onion
    • 3 tablespoons palm oil
    • 1 large onion, cut into rings
    • 200ml coconut milk
    • 360ml water
    • 1 green capsicum, sliced
    • 1 red capsicum, sliced
    • 2 tomatoes, seeded and sliced
    • 1/2 bunch spring onions, chopped
    • 1 bunch coriander, chopped

    1. Wash fish under running water and pat dry. Season with salt, garlic and lime juice, and marinate for 30 minutes.
    2. Add the olive oil to a large frying pan over medium heat. Add the grated onion and cook for a few seconds.
    3. Add the fish along with the marinade to the pan and cook for a few minutes.
    4. Add the palm oil, onion slices, coconut milk and water; simmer for about 15 minutes.
    5. Add the capsicums, tomatoes, coriander and spring onion; cover and cook for another 5 minutes. Serve hot with white rice or coconut rice.

    I followed the recipe, but was disappointed in the overall flavour and consistency of the dish. The water content seemed too great and the coconut flavour was lost.  -  16 Apr 2017  (Review from Allrecipes UK & Ireland)
