This rice and tomato dish makes a great side and is the perfect use for leftover rice. It is also great for a light lunch. Seasoned with mixed herbs.

Serves: 4 

  • 2 teaspoons vegetable oil
  • 1 medium onion, diced
  • 2 medium tomatoes, diced
  • 4 cups cooked riced
  • 1/4 teaspoon mixed herbs

Preparation:45min  ›  Cook:20min  ›  Ready in:1hour5min 

  1. Heat saucepan then add vegetable oil and onion. Braise slowly, then add tomatoes. After a little further cooking add rice and herbs. When hot through, it is ready to serve.
