Lentils Baked in Tomatoes

    Probably the easiest vegetarian and vegan dinner ever. Stew up some lentils, add some onion, pour on a tin of tomatoes then bake in the oven until done.

    Serves: 4 

    • 3 cups brown lentils
    • 1/2 cup water
    • 2 onions, minced
    • 1 tablespoon oil
    • 1 (400g) tin of tomatoes in puree
    • salt, to taste

    Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 180 degrees C.
    2. Stew lentils in water until tender. Brown onions in oil then add to the lentils. Pour into a baking dish then cover with with the tin of tomatoes. Add salt to taste.
    3. Bake in preheated oven for 30 minutes.
