Walnut Roast

    Walnut roast is a vegetarian meatloaf. Using eggs, milk, Melba toast crumbs, ground walnuts and steamed rice, this protein rich dish is a great vegetarian alternative.

    Serves: 4 

    • 1 cup milk
    • 1 cup Melba toast crumbs
    • 1 1/2 tablespoons butter
    • 2 tablespoons onion, diced
    • 1 tablespoon parsley, chopped
    • savoury, to taste
    • 1 egg, slightly beaten
    • 1/2 cup ground walnuts
    • salt, to taste
    • 1 cup steamed riced
    • 1 tablespoon flour

    1. Preheat oven to 180 degrees C.
    2. Pour 3/4 cup of the milk over the crumbs then allow to stand for 5 minutes. Put butter, onion, parsley and a pinch of savoury into a saucepan then let simmer until the onion has softened.
    3. Add the flour and stir. Add the rest of the milk then stir until smooth. Add the egg, walnuts and salt to taste. Mix well. Add the soaked crumbs and lastly fold in the steamed rice with a fork.
    4. Press gently into an oiled bread tin. Bake in preheated oven until a nice brown colour is reached.
