This boiled pudding recipe has been in my family for ages and I don't know where it got it's name. It's full of raisins and chopped dates and boiled in a pudding cloth.
To prepare a pudding cloth, dip it in boiling water, then ring out (wearing gloves). Lay it flat on your bench and rub flour into the centre in a circle about 40cm wide, this creates the pudding skin. Place pudding ingredients in, wrap up then tie with string. Immediately submerge in boiling water.
You can use 1 cup flour and 1 cup breadcrumbs instead of 2 cups flour. You can add 1-2 eggs and use less water.
