Secret Pumpkin Soup

    This is not your usual mushy bland pumpkin soup, it is packed full of delicious warming flavors, if you are sick of the same old taste give this aromatic recipe a go! Everyone I make it for loves it!

    Serves: 4 

    • olive oil for frying
    • 1 onion
    • 1/2 a chilli
    • 3 cloves of garlic
    • 1/2 tsp cumin seeds
    • half a butternut pumpkin
    • a small sweet potato
    • 2 carrots
    • small can of good coconut milk
    • 1/2 tsp nutmeg
    • crusty bread to serve

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Cut everything up. Fry the onion in a big pot till soft, put in the chilli, garlic and cumin seeds, fry for two minutes.
    2. Put in the pumpkin, sweet potato and carrots. Top up with enough water to cover them and season with salt and pepper. When the veggies are soft enough to cut them in half with a folk (about 20 mins) take them off the heat and blend them with the coconut milk and nutmeg.
    3. Serve with bread.
