French Onion Soup with Baguettes

    This is a tasty French soup. The flavours are divine. This recipe serves 6.

    Serves: 6 

    • 50g butter
    • 750g onion, finely sliced
    • 2 garlic cloves, crushed
    • 40g plain flour
    • 2 litres of stock (veg, chicken or beef)
    • 250ml white wine
    • 1 bay leaf
    • 2 sprigs of thyme
    • 100g Gruyere or tasty cheese, finely grated
    • 1 stale baguette, sliced into an even number of pieces
    • salt and pepper to season

    1. Melt the butter in a saucepan and add the onions. Cook on a low heat for approx. 25 mins, or when the onions begin to caramalise. Stir occasionally.
    2. Add the garlic and flour and stir for 2 mins. Slowly add the stock and wine, bring to the boil.
    3. Add the bay leaf and thyme. Cover and simmer for 25 mins, after which remove the bay leaf and thyme. Check flavour, add salt and pepper if needed.
    4. Preheat the grill (broiler). Toast the baguette slices. Divide among 6 soup bowls, then ladle the soup on top. Sprinkle with cheese, then return to the grill until the cheese melts and turns golden brown.
    5. Serve while hot.
