A simple sponge that is loaded with just the right amount of sultanas makes a great afternoon tea treat. Enjoy with a cup of tea or coffee.

Makes: 1 cake

  • 1 1/2 cups (190g) flour
  • 1 teaspoon baking powder
  • 60g butter
  • 130g sugar
  • 150ml milk
  • 1 large egg
  • 90g sultanas

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Preheat oven to 180 degrees C.
  2. Sift together flour and baking powder, set aside. Cream together butter and sugar. Add in egg then mix well. Add milk and flour. Fold in sultanas.
  3. Pour into a greased cake tin and bake until a knife inserted into the centre comes out clean, about 30 minutes.
