A simple sponge that is loaded with just the right amount of sultanas makes a great afternoon tea treat. Enjoy with a cup of tea or coffee.
Makes: 1 cake
1 1/2 cups (190g) flour
1 teaspoon baking powder
1 large egg
- Preheat oven to 180 degrees C.
- Sift together flour and baking powder, set aside. Cream together butter and sugar. Add in egg then mix well. Add milk and flour. Fold in sultanas.
- Pour into a greased cake tin and bake until a knife inserted into the centre comes out clean, about 30 minutes.
