These easy coconut biscuits have very simple ingredients and are quick to make. They are topped with an almond and baked until golden brown.

The Walters

Serves: 8 

  • 190g butter
  • 1 1/8 cup (250g) sugar
  • 2 eggs
  • 2 1/2 cups (320g) self raising flour
  • 1 1/2 cups (130g) desiccated coconut
  • almonds, for decorating

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Preheat oven to 180 degrees C.
  2. Cream together butter, sugar and eggs. Beat in flour then coconut. Drop by teaspoonfuls on a baking tray and place an almond on top.
  3. Bake about 10-15 minutes, until golden brown.
