This recipe for oat biscuits with almond essence dates back to war times, when butter was rationed and people could not get all the ingredients for their usual baking.

The Walters

Serves: 6 

  • 2 cups (180g) rolled oats
  • 1/2 cup (60g) plain flour
  • 1 cup (160g) brown sugar
  • 90g butter, melted
  • 1 teaspoon almond essence
  • 1 teaspoon bicarb soda
  • 2 tablespoons boiling water

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Preheat oven to 170 degrees C. Line a baking tray with baking paper.
  2. Combine oats, flour, brown sugar, butter and almond essence. Dissolve bicarb soda in the boiling water then add that to the oat mixture. Drop spoonfuls on prepared baking tray and bake until brown.
