This light and easy cake recipe can be adjusted to suit any palette. This is a basic recipe and is light and delicious the way it is or topped with your favourite icing.

The Walters

Makes: 1 cake

  • 130g butter
  • 130g sugar
  • 1 egg
  • 250g plain flour
  • 1/2 teaspoon bicarb soda
  • 1 teaspoon cream of tartar

  1. Preheat oven to 180 degrees C. Grease a cake tin.
  2. Cream together butter and sugar. Beat in egg. In a separate bowl combine flour, bicarb soda and cream of tartar. Mix this into the the egg mixture.
  3. Pour into prepared cake tin and bake in preheated oven until a knife inserted in the centre comes out clean, about 20-30 minutes. Allow to cool on a wire rack before icing with your favourite icing.
