These yummy coconut rocks are gold and crusty on the outside and soft and chewy on the inside. Make these for your next party and you can't go wrong.

The Walters

Makes: 14 rocks

  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 2 tablespoons cornflour
  • 2 tablespoons desiccated coconut
  • 1 egg
  • 1 teaspoon baking powder

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Preheat oven to 200 degrees C.
  2. Beat butter and sugar to a cream then add the rest of the ingredients. Put teaspoon's full on a greased baking tray and bake in preheated oven until done, about 15 minutes.

My Mum has just made these and she always follows every recipe to the letter. She very very very rarely has any failures and is a good cook. When these came out of the oven, they were all flat and joined together, I thought I'd leave this review (I rarely do) to warn people so they don't make the same mistake in making it. - 30 Aug 2014
