Pesto Mousetraps

    These toasted bread slices are topped with pesto, cheese, onion, tomatoes and Parmesan then toasted under the ovens griller, for a great side or snack in minutes.

    Makes: 6 mousetraps

    • 6 slices of bread
    • 1/2 cup basil pesto
    • 1 cup cheese, grated
    • 1/4 cup onion, diced
    • 4 cherry tomatoes, sliced
    • 1/4 cup Parmesan, grated

    1. Preheat oven's griller. Lay the bread on a baking tray then put in the oven until the bottom is toasted, about 2-3 minutes.
    2. Remove from oven and flip over. Spread on the pesto. Sprinkle on the cheese and onion. Place the tomato slices on top then sprinkle the top with Parmesan.
    3. Place back in the oven until done, about 3 minutes.
