These potato pancakes have grated potato, courgette, onion, flour and eggs. I just use what I have on hand, so feel free to substitute anything you like.

Cheap Tricks

Don't make any special trips the supermarket for these easy fritters, just use what you have on hand! No courgette? Use more potato and vice versa. Don't have Parmesan cheese? Use tasty! Make it your own.

A courgette is known in Australia as a Zucchini.
