Wash the potaoto then grate it. Squeeze out the starch then rinse and squeeze again. Add potato to a bowl and stir in the courgette. Stir in the flour and the Parmesan. Beak in the egg and mix in well. Stir in the celery salt, salt and pepper.
Heat the olive oil in a frying pan over medium high heat then add large tablespoons of the fritter mixture and fry until golden brown on on each side, turning once.
Don't make any special trips the supermarket for these easy fritters, just use what you have on hand! No courgette? Use more potato and vice versa. Don't have Parmesan cheese? Use tasty! Make it your own.
