Everything Free Chocolate Muffins

    You really don't need to worry about allregies (e.g. gluten, dairy, egg) with these great muffins that are made with chickpea, rice flour and apple sauce.

    Makes: 14 muffins

    • 45g chickpea flour
    • 45g cocoa powder
    • 160g brown rice flour
    • 4 tablespoons oil
    • 4 tablespoons apple sauce (or stewed apples)
    • 240ml water
    • 240ml maple syrup
    • 1/2 tablespoons bicarbonate of soda

    1. Preheat the oven to 180 degrees C and line muffin tray with cupcake papers.
    2. In food processor, blend together all of the ingredients except the bicarbonate of soda.
    3. Once the mixture is well mixed, add the bicarbonate of soda and mix again. Pour mixture into the cupcake papers.
    4. Bake on the middle rack for 20-25 minutes or until a skewer inserted into a muffin comes out clean.
    5. Leave in muffin tray to cool on a wire rack.
