    This is a light and simple pasta salad. Greta for young or homegrown silverbeet.

    Serves: 4 

    • 125g fusilli pasta
    • 300g silverbett, white stems removed and thinly sliced
    • 1 red capsicum, seeded and chopped
    • 4 tablespoons vinaigrette, home made or bottled
    • freshly ground black pepper to taste

    1. Cook fusilli according to packet instructions. Drain, and rinse under cold water to cool.
    2. In a medium bowl, toss together the fusilli, silverbeet and red capsicum. Pour in dressing sparingly until you reach your desired amount. Season with black pepper to taste.

    Used different ingredients. Such a simple recipe! But I didn't have red I tried chopped up carrot. Not as colourful as red capsicums, but nice and crunchy. My wife liked it and took all the leftovers to work in the morning. If you want to try the carrots, the sweetness of the carrots goes nicely with a balsamic vinaigrette (with a touch of honey). - 29 Sep 2008


    My whole family liked this salad. We grew silverbeet in our garden this Summer and I was looking for ways to get my kids to enjoy eating it. This salad really fit the bill. The bright colours are a real bonus. - 29 Sep 2008
