Mix the yeast with the flour in a mixer fitted with a kneading hook. Add the rest of the ingredients and knead for 10 minutes (If the dough is sticking to the bottom of the bowl add more flour).
Put the dough into a large greased bowl. Sprinkle some oil over the top, then let rise to twice its original size.
Preheat the oven to 250 degrees C.
Put the dough onto a floured surface and divide into 8-10 equal parts. Roll each part into a ball, then cover with a moist towel and leave for 10 minutes.
Roll out each ball into a disc 10-12cm in diameter. Place them onto a greased tray and cook for 5 minutes, just until the pitas swell up and begin to show golden spots (Avoid over-baking them, it will make them dry up).
