This chutney has tomatoes, sugar, lemons and green ginger. The secret ingredient is the dash of vanilla added at the end. This recipe has been in my family forever.

The Walters

Makes: 6 jars

  • 7 1/2 kg tomatoes
  • 6 kg sugar
  • 6 lemons
  • 130g green ginger
  • 1 tablespoon vanilla essence

Preparation:20min  ›  Cook:1hour  ›  Extra time:1day soaking  ›  Ready in:1day1hour20min 

  1. Slice tomatoes then cover with half the sugar and allow to stand for 24 hours. Squeeze juice from the lemons then slice and cover with water for 24 hours.
  2. Combine tomatoes, lemons and ginger then bring to a boil and cook until mixture begins to thicken. Add the rest of the sugar then cook 25-30 minutes. Test then remove from heat and add vanilla.
