College pudding, traditionally served in the halls of colleges, is a steamed pudding using flour, butter, sugar, milk and eggs.

The Walters

Serves: 4 

  • 1 1/2 cups (190g) flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon soda
  • 60g butter, melted
  • 1/2 cup (110g) sugar
  • 1 egg
  • 1/2 cup (125ml) milk

Preparation:10min  ›  Cook:1hour30min  ›  Ready in:1hour40min 

  1. In a bowl, mix flour, cream of tartar and bicarb soda, set aside.
  2. Melt butter in a pudding basin, add sugar, stir well. Break in egg, beat well. Pour in milk, add flour mixture.
  3. Cover then steam for 1 1/2 hours. Turn pudding out on a plate.
