Basic Roasted Garlic

    Roasted garlic is a great thing to have on hand - you can use it in soups and stews as well as when you are making hummus and tzatziki.

    • 1 large head garlic
    • 2 tablespoons olive oil

    1. Preheat oven to 120 degrees C. Peel off the outside layers of the garlic head, leaving skins on the individual cloves and base intact. Slice 5mm off the top of the garlic head, exposing the flesh.
    2. Place head in a small baking dish or ramekin and drizzle with olive oil. Bake for 20 minutes, until the outside is lightly browned and garlic cloves are soft. When cool enough to touch, squeeze each clove to extract garlic.
