This easy lemon jam is so basic. Using only lemons, water and sugar, it is soaked overnight then slow cooked to create a delicious lemon jam.

Makes: 6 jars

  • 12 lemons
  • 24 cups (6 litres) water
  • 5kg sugar

Preparation:15min  ›  Cook:2hours  ›  Extra time:1day12hours soaking  ›  Ready in:1day14hours15min 

  1. Cut up lemons then let soak in water for 36 hours.
  2. Put in a saucepan then boil about an hour. Add sugar then boil for about an hour longer.
  3. Allow to cool before bottling.
