Baked Salmon

    This baked salmon recipe is easy to do and gets a flavour boost from lemon, dill, garlic, ground coriander and honey.

    Serves: 4 

    • 1 kg salmon fillet
    • fresh dill
    • 1 lemon
    • 2-3 cloves garlic
    • 3 tablespoons olive oil
    • salt and pepper
    • 1 teaspoon ground coriander
    • 1 tablespoon honey

    Preparation:10min  ›  Cook:15min  ›  Extra time:30min marinating  ›  Ready in:55min 

    1. Chop the dill and place in a mixing bowl. Squeeze the lemon and pour the juice over the dill.
    2. Crush or mince the garlic and add to the dill. Add the olive oil, salt, pepper, coriander and honey then mix well.
    3. Rinse the salmon and pat dry. Lay fillet on a piece of cling wrap, skin side down. Cover evenly with the dill marinade. Wrap up in the cling wrap and leave to marinate for 30 minutes.
    4. Unwrap the salmon and place in a baking dish, skin side down. Bake in a preheated 220 degree C oven for 12-15 minutes.

    I think I over cooked it...but it was still very good and even better as leftovers with salad the next day  -  16 Apr 2019  (Review from Allrecipes USA and Canada)
