These quick and easy potato fritters make a great side or even a light tea. Just grate some potatoes, season with parsley, salt and pepper, bind with some eggs then fry.
4 raw potatoes, grated
1/4 cup chopped parsley
salt and pepper, to taste
2 eggs, beaten
oil, for frying
- In a frying pan, heat a few tablespoons oil.
- Combine potatoes, parsley, salt, pepper and eggs.
- Fry in patties, turning once, until golden brown on each side.
