These quick and easy potato fritters make a great side or even a light tea. Just grate some potatoes, season with parsley, salt and pepper, bind with some eggs then fry.

The Walters

Serves: 4 

  • 4 raw potatoes, grated
  • 1/4 cup chopped parsley
  • salt and pepper, to taste
  • 2 eggs, beaten
  • oil, for frying

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. In a frying pan, heat a few tablespoons oil.
  2. Combine potatoes, parsley, salt, pepper and eggs.
  3. Fry in patties, turning once, until golden brown on each side.
