This vegetarian "nut meat" was another recipe that was handed down. A vegan dish using sago, nut butter, muesli, rusk crumbs and onion. Steamed until done.

The Walters

Makes: 1 loaf

  • 2 tablespoons sago
  • 2 tablespoons nut butter
  • 2 cups boiling water
  • 1 cup muesli
  • 1 cup rusk crumbs
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1 small onion, grated
  • fresh parsley, chopped

Preparation:15min  ›  Cook:3hours  ›  Extra time:20min soaking  ›  Ready in:3hours35min 

  1. Soak sago in some water for 20 minutes. Grease a loaf tin.
  2. In a bowl, mix nut butter and boiling water until smooth. Stir in the rest of the ingredients. Place in the prepared tin.
  3. Place tin of nut meat into a saucepan of boiling water (lower than the sides of the tin) then cover and steam for about 3 hours.

To save time

You could try baking this in the oven. It will be dryer, but much quicker.
