Melon Pickle

    This delicious melon pickle recipe has been in our family for years. Melon, vinegar, onion, mixed spice, cayenne, mustard and turmeric. Goes great on crackers.

    Makes: 4 bottles

    • 1 1/2kg melon, finely diced
    • vinegar, to cover
    • 1kg onions, sliced
    • 2 cups sugar
    • 1 dessertspoon salt
    • 1 teaspoon mixed spice
    • 1 teaspoon cayenne pepper
    • 1/2 cup mustard
    • 1 teaspoon turmeric
    • 1 tablespoon plain flour
    • cold vinegar

    1. Soak the melon overnight in enough vinegar to cover.
    2. Add onions, sugar, salt, mixed spice and cayenne then boil until tender, about 2 hours.
    3. In a small bowl, mix together mustard, turmeric and plain flour. Add enough cold vinegar to make a paste then stir it into the melon mixture. Boil for 5 to 10 more minutes. Allow to cool before bottling.
