    This apple and lemon filling is great for fruit pies, tarts and any other sweet places you can think to use it. Apples, lemon, egg and coconut.

    Ingredients
    Makes: 2 cups

    • 2 apples, peeled and sliced
    • 1 lemon, juiced and zested
    • 1 egg, beaten
    • 1/2 cup coconut, to taste
    • cornflour, if needed

    Directions
    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Stew apples in a frying pan until they begin to soften. Stir in the lemon juice and zest. Remove from heat then stir in the egg and coconut. If not thick enough, add cornflour.
    2. Use in your favourite pastry to make apple and lemon tarts.
