Asparagus with Cashews

    Asparagus and cashews lightly stir fried in ginger and olive oil. Sesame seeds, sesame oil and soy sauce are added for flavour. This is a great side for any meal.

    Serves: 2 

    • 2 tablespoons ginger, minced
    • 1 tablespoon olive oil
    • 1 bunch asparagus
    • 1 cup cashews
    • 1 tablespoon sesame seeds
    • 2 tablespoons sesame oil
    • soy sauce, to taste

    1. Stir fry the ginger in the olive oil until lightly brown. Add asparagus and fry for 2 minutes. Add cashews and sesame seeds then stir fry until browned. Add the sesame oil and soy sauce. Serve.
