Pomegranate Quinoa Salad

    Quinoa tossed with pomegranate seeds, mandarin wedges, coriander leaves and tomato. Topped with chopped nuts then drizzled with olive oil.

    • 1 cup cooked quinoa
    • 1/4 cup pomegranate seeds
    • 1 mandarin, peeled and broken into wedges
    • 1 tablespoon coriander leaves
    • 1/2 cup tomato, diced
    • nuts for topping
    • olive oil for drizzling
