Ham Pea and Potato Soup

    This quick and easy soup uses a stock cube base, so it's ready in no time. With potato, ham and frozen peas this soup can be a starter, a side or a whole meal.

    Serves: 6 

    • 1 medium brown onion, finely diced
    • 2 cloves garlic, diced
    • 2 tablespoons olive oil
    • 1 cup cooked ham, diced
    • 2 potatoes, cut into small squares
    • 2 chicken stock cubes
    • 6 cups water
    • 2 cups frozen peas
    • 1/2 teaspoon dill
    • salt and pepper, to taste
    • 1/4 cup sour cream
    • 1/4 cup chives

    1. In a saucepan over medium high heat, cook the onion and garlic in the oil. Once soft, stir in the ham and potatoes. Stir for a few minutes until ham begins to brown then add in the stock cubes and water.
    2. Bring to a boil then simmer, stirring occasionally, until potatoes are tender. Stir in the peas and dill. Cook until warmed though. Serve with a dob of sour cream on top and sprinkle with chives.
