Tomato Pea and Pasta Salad

    A quick and easy pasta salad with spiral pasta, peas, cherry tomatoes, rocket, onion and basil. Mixed with a lemon pesto vinaigrette and topped with Parmesan.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 tablespoon balsamic vinegar
    • 500g cherry tomatoes, halved
    • 300g spiral pasta
    • 2 cups frozen peas
    • 1/2 lemon, juiced
    • 1 onion, diced
    • 150g pesto
    • 1 cup rocket
    • 1/4 cup basil leaves
    • 1/2 cup Parmesan cheese

    1. Preheat oven to 200 degrees C. Line a baking tray with baking paper. Cook pasta according to the packet directions. When there are two minutes remaining, stir in the frozen peas. Drain and return to pan.
    2. Whisk together oil and vinegar then stir in the tomatoes. Pour onto baking tray then bake in preheated oven until tender, about 10 minutes.
    3. Into the pasta and peas stir in the lemon juice, pesto, rocket, onion, basil and the cooked tomatoes. Stir to combine then serve topped with Parmesan. Best served warm.
