    Prawns, capsicum and mushrooms sauteed in olive oil, paprika, garlic and lemon juice. These tapas are great skewered or served with toasted baguette slices.

    Makes: 12 Tapas

    • 1/4 cup olive oil
    • 1 red capsicum, cut into chunks
    • 6 mushrooms, halved
    • 1 teaspoon smoked paprika
    • 2 cloves garlic, minced
    • 12 medium king prawns, shelled, deveined, tails intact
    • 1/2 lemon, juiced

    1. In a frying pan, heat olive oil. Saute the capsicum and mushroom until soft and slightly browned, about 5 minutes.
    2. Season with paprika then stir in garlic and prawns. Squeeze over the lemon juice and cook, stirring, until prawns are pink and no longer translucent, about 2 minutes per side.

    Serving Suggestions

    Serve in a nice bowl with baguette slices on the side or skewer a capsicum chunk, prawn and a mushroom on a toothpick then serve.
