    This savoury loaf has frozen spinach, garlic, thyme, rosemary, Parmesan and fetta cheese. Mixed into a dough, rolled into logs then plaited into a pretty loaf.

    Makes: 1 loaf

    • 2 cups self raising flour, sifted
    • 2 packets frozen spinach, thawed then squeezed dry
    • 2 cloves garlic, crushed
    • 3 teaspoons thyme, chopped
    • 1 teaspoon rosemary, chopped
    • 1 cup Parmesan, grated
    • 150g fetta, crumbled
    • 3/4 cup milk, to bind

    1. Preheat oven to 200 degrees C. Grease a baking tray.
    2. Stir together flour, spinach, garlic, rosemary, thyme, Parmesan and about 2/3 of the fetta. Slowly stir in enough milk to bind.
    3. Place dough on a lightly floured bench then divide into 3 balls. Roll each ball into a log then plait the logs together. Pinch the ends together. Place on baking tray and bake in preheated oven for about 30 minutes. Remove from oven, sprinkle with remaining feta then bake for 10 minutes more.
