Penne with Toasted Pine Nuts and Sun-Dried Tomatoes

    I created this simple Italian-style pasta dish one day when trying to use up some sun-dried tomatoes.

    Serves: 4 

    • 1 cup vegetable stock
    • 12 dehydrated sun-dried tomatoes
    • 500g penne pasta
    • 2 tablespoons pine nuts
    • 1 tablespoon olive oil
    • 1/4 teaspoon dried crushed chillies
    • 1 clove garlic, finely chopped
    • 1 bunch fresh spinach, well rinsed and torn
    • freshly grated parmesan cheese to serve

    1. In a small saucepan, bring the stock to the boil. Remove from heat. Place the sun-dried tomatoes in the stock and set aside for 15 minutes, or until tomatoes soften. Drain, reserving stock, and coarsely chop.
    2. Cook penne in boiling salted water according to packet instructions; drain.
    3. While penne is cooking, place pine nuts in a dry frying pan over medium heat. Cook and stir until lightly toasted. Set aside.
    4. Heat the olive oil and chillies in a frying pan over medium heat, and gently fry the garlic for 1 minute, or until tender. Add the spinach and cook until almost wilted. Pour in the reserved stock, and stir in the chopped sun-dried tomatoes. Continue cooking for 2 minutes, or until heated through.
    5. In a large bowl, toss the cooked penne with the spinach and tomato mixture and toasted pine nuts. Serve with freshly grated parmesan.

    Used different ingredients. I loved this dish. I did substitute white wine for the vegetable stock. Even the leftovers were yummy. I think I might add some fresh mushrooms next time.  -  29 Sep 2008


    Used different ingredients. Very good, very simple. I added some artichoke hearts and a little salt to taste. Toast the pine nuts and use 1 Tbsp per serving. As others have said, I would add a lot more spinach. Thanks, one of the quickies for my recipe box. I may add some chicken next time.  -  29 Sep 2008


    Used different ingredients. One of my favourites ... very simple to prepare and tasty! I omit the pine nuts as a personal preference, substitute dehydrated tomatoes with julienne cut sun-dried tomatoes packed in oil, no need to presoak them and adds great texture and flavour, and drizzle additional olive oil as the final step to moisten the pasta a bit.
