This basic Spanish rice goes great with anything, especially tacos, enchiladas or any Mexican dish. Rice simmered in vegetable stock, diced tomatoes and oregano.

Serves: 4 

  • 2 cup rice
  • 1/4 cup olive oil
  • 1/2 onion, diced
  • 3 cups vegetable stock
  • 1 cup diced tomatoes
  • salt, pepper and oregano, to taste

Preparation:5min  ›  Cook:30min  ›  Ready in:35min 

  1. Brown rice in frying pan of olive oil. Stir in onion and cook until soft.
  2. In a saucepan, bring stock to a simmer then stir in tomatoes. Stir in the rice then cover and simmer until cooked. Add salt, pepper and oregano to taste.
