Deep Fried Plantains
Plantains diced into bite sized pieces, deep fried in olive oil then sprinkled with brown sugar make a mean treat for any time of day.

4 large plantains (or unripe bananas), peeled
1 cup olive oil
1/2 cup brown sugar

- Dice plantains into bite sized pieces.
- Heat olive oil in saucepan. Deep fry plantains until deep golden brown. Drain on newspaper.
- Sprinkle with brown sugar to serve.
