    This is a great take on salsa which uses watermelon instead of tomato but still includes onion, chilli, coriander and balsamic vinegar.

    Ingredients
    Serves: 16 

    • 1/2 large watermelon, seeds removed and coarsely chopped
    • 1/2 red onion, chopped
    • 1 red chilli, seeds removed and chopped
    • handful chopped coriander leaves
    • 2 tablespoons balsamic vinegar
    • 1/4 teaspoon salt

    Directions
    Preparation:20min  ›  Ready in:20min 

    1. In a serving bowl, mix together all ingredients. Cover and refrigerate for at least 1 hour to meld flavours.

    I made this recipe for a party I recently had and it was a hit! I followed everything to the T and all the ingredients came from my garden. Those who had found out that it was watermelon were afraid to try it at first but after trying it they all wanted the recipe. - 29 Sep 2008
