Paleo Banana Bread

    Fluffy and tasty gluten free banana bread...yummier than you'd think!

    Makes: 1 loaf

    • 3 eggs, separated
    • 5 tbsp honey
    • 2/3 cup chopped pecans (optional)
    • 4 tbsp olive oil
    • 1 tsp vanilla extract
    • 3 mashed bananas
    • 1/2 tsp ground cinnamon
    • 1/2 tsp ground nutmeg
    • 1 tsp baking soda
    • 1 tsp baking powder
    • 2 cups almond meal
    • almond slivers (optional)

    1. Preheat the oven to 180 C.
    2. Beat the egg yolks and honey in a large bowl until light and fluffy.
    3. Add pecans, oil, vanilla, mashed banana, cinnamon, nutmeg, baking soda and powder and almond flour and combine until smooth.
    4. In a separate bowl, beat the egg whites until stiff peaks form.
    5. Fold egg whites into the banana mixture to pull it away from the sides before gradually folding the rest of the egg whites into the mixture.
    6. Line a loaf tin with baking paper and pour the banana mixture into this.
    7. Sprinkle almond slivers over the top.
    8. Place in the oven for 40-45 mins. Let cool. Slice and serve plain or with spreads.

    I can't believe how good this tastes! It's insane! Much better than a flour recipe. The folding whipped whites in is essential, it rose so much. I didn't add the pecans & it's quite juicy. I also added raspberries to the top. I feel like I didn't need to be as fussy with measurements as I am with other cakes Definitely making again  -  27 Nov 2013
