Spicy Pasta with Meatballs

    Delicious beef, pork and Parmeasn meatballs simmered to perfection in a spicy pasta sauce with garlic, onion and chillies then served over your favourite pasta.

    Serves: 6 

    • Meatballs
    • 4 slices of bread
    • 1/2 cup milk
    • 2 tablespoons olive oil
    • 250g beef mince
    • 250g pork mince
    • 2 cloves garlic, minced
    • 1 medium onion, finely diced
    • 2 teaspoons salt
    • 1 lemon, juiced and zested
    • 1 cup Parmesan cheese, grated
    • 1/4 cup parsley, chopped
    • pepper, to taste
    • Pasta Sauce
    • 1/4 cup olive oil
    • 1 small onion, diced
    • 2 cloves garlic, diced
    • 750ml passata
    • 1 1/2 cups water
    • salt and pepper, to taste
    • 1 tablespoon parsley, chopped
    • 1 small red chilli, seeded then diced
    • 1 jalapeno chilli, seeded then diced
    • 500g pasta

    1. Cut crusts off bread then tear bread into pieces. In a bowl, combine milk and olive oil, stir in the bread then set aside until absorbed. Whisk with a fork.
    2. Mix together beef mince, pork mince, garlic, onion, salt, zest, juice, cheese, parsley and pepper. Shape into balls then refrigerate for 30 minutes.
    3. Pasta Sauce

    4. Heat oil in a saucepan. Stir in onion and saute for a minute. Add garlic and stir for 30 seconds. Stir in passata, water, salt, pepper, parsley and chillies. Lower heat and simmer at medium low for 20 minutes. Place meatballs into the simmering sauce then cook until done, about 12 minutes.
    5. Cook pasta according to packet directions then drain. Serve pasta topped with meatballs and sauce.
