Small balls of mashed potato, ham, onion and asparagus are seasoned with nutmeg then crumbed and fried in ghee. This is a great use for leftover potatoes and ham.


Serves: 6 

  • 900g potatoes, mashed
  • 1/4 cup cream
  • 2 tablespoons butter
  • 1 cup cooked ham, diced
  • 1 large onion, diced
  • 2 egg yolks
  • 1/2 cup asparagus, diced
  • salt and pepper, to taste
  • fresh nutmeg, grated, to taste
  • brown breadcrumbs
  • ghee, for frying

  1. Mix mashed potatoes with the butter and cream. Stir in the ham, onion, asparagus, egg yolks, salt, pepper and nutmeg.
  2. Roll mixture into little balls. Pour breadcrumbs onto a plate. Roll potato balls in the bread crumbs to coat.
  3. In a frying pan heat the ghee then fry the potato balls until golden brown and heated through.
