Roast Salmon Dinner

    This dinner has roasted salmon topped with caramelised onions, garlic and tomatoes then served with roasted broccoli on the side. A nice full, yet light, dinner.

    Serves: 4 

    • 2 tablespoons olive oil
    • 4 salmon fillets
    • 2 cups fresh broccoli heads
    • salt, to taste
    • 1 1/2 tablespoons olive oil
    • 2 large onions, sliced
    • 2 cloves garlic
    • 2 tablespoons raspberry vinegar
    • 1/4 cup sugar
    • 4 large tomatoes, diced

    1. Preheat oven to 220 degrees C.
    2. In a large frying pan heat 2 tablespoons olive oil. Fry salmon, skin side down, for about 1 minute. Add broccoli to the frying pan and season with salt.
    3. Place in the oven and roast salmon until done, about 5 minutes, (depending on thickness). Remove salmon from frypan then continue roasting broccoli while cooking onions.
    4. In a frying pan over low heat, heat 1/2 tablespoons olive oil then stir in the onions and cook for about 10 minutes. Stir in garlic, vinegar and sugar then cook until sugar melts. Stir in tomatoes, cover then simmer for about 30 minutes.
    5. Serve salmon topped with the tomato and onions. Serve the broccoli on the side.
