Chilli Prawn Soup

    This quick and easy spicy prawn soup has prawns, red chilli, a dash of sweet chilli sauce, a splash of cream and lots of parsley. Makes a yummy lunch or dinner.

    Serves: 2 

    • 1 1/2 cups chicken stock
    • 1 cup water
    • 2 tablespoons butter
    • 1 tablespoon olive oil
    • 1 clove garlic, crushed
    • 400g prawns, peeled and deveined
    • 1 red chilli, diced, seeds removed
    • 1 tablespoon thickened cream
    • 1 teaspoon sweet chilli sauce
    • 1 cup parsley, chopped
    • pepper, to taste

    1. In a saucepan combine stock and water then bring to a boil.
    2. In a frying pan heat the oil, butter, garlic and chilli. Stir in the prawns and saute for about a minute.
    3. Stir in hot stock, cream, sweet chilli sauce and most of the parsley. Simmer until prawns are cooked though and no longer translucent. Sprinkle with pepper and parsley to serve.
