This casserole is made with layers of potato, onion, apples and bacon. It is then covered with a roux sauce and baked in the oven for two hours until done.
In a large casserole dish layer the potatoes, onions, apples and bacon. Season with pepper and cinnamon.
In a saucepan melt the butter and whisk in the flour. Slowly stir in the milk while whisking. Allow to simmer until thickened then season with salt and pepper.
Pour sauce over the casserole. Cover then bake in preheated oven for 1 hour. Uncover, lower heat to 180 degrees C then bake an additional hour.
